Lemon Poppyseed Pancakes. So I know, I have a problem… admitting it is the first step though right?! Okay here we go… I LOVE PANCAKES! So here is yet another pancake recipe for you all. What’s not to love about lemon poppyseed pancakes? They are so tasty with a fresh lemon zap and comforting pillowy sweet pancake batter.

Cooking breakfast is one of my favorite parts of the weekend. We have a kitchen island with stools and my three year old will sit on his stool and chat with me. Of course waiting for his fresh from the griddle pancakes! Better yet, when I am mixing up the batter he is always willing to step in and help me make a mess in the kitchen!  Spending time with my mom in the kitchen “helping out” is one of my favorite memories, and I am so glad I have the opportunity to share that with my sons!

Ingredients

  • 2 cups flour
  • 2 tbsp baking powder
  • 1 heaping tbsp poppy seeds
  • 3 tbsp sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1/2 cup Greek vanilla yogurt
  • 2 tbsp butter
  • 1 1/2 cup milk
  • Zest of 1 lemon
  • Juice of 1 lemon 🍋

Instructions

  • In large bowl mix flour, baking powder, sugar, and poppy seeds. Whisk till thoroughly mixed
  • In large measuring cup or medium bowl mix melted butter, yogurt, egg, vanilla, lemon zest, and lemon juice.
  • Combine wet and dry ingredients in the large bowl.
  • Heat cast iron skillet to medium high heat, oil skillet, pour 1/2 cup pancakes and cook until bubbles form then flip and cook until done.
