Peanut Butter Jam Muffins

Okay let’s face it, one of the best things about having toddlers and babies running or tottering around the house is that you get to eat the kids left over peanut butter and jam sandwich pieces. Or maybe that’s just me. Seriously I LOVE homemade jam and peanut butter, put that combination on a slice of toast and I am in heaven. That is what makes these peanut butter jam muffins so addicting, they bring that nostalgia and flavor all in one easy to eat muffin.

One of the best muffin surprises has to be that moment when you bite into your muffin and find out there is a sweet gooey treat inside. Fresh homemade jam and a little peanut butter are at the center of these peanut butter jam muffins. Simply delicious! What is the magical secret to get that special center surprise inside? Actually the process is quite simple, as is this whole recipe.

Instructions:

Okay enough talking about the muffins, how do you actually MAKE these peanut butter jam muffins?! Lets get at it! First, preheat oven to 375 degrees. Now get out two medium mixing bowls, one for the wet ingredients and another for the dry. Next place flour, baking powder, baking soda, and salt in one bowl and mix together with a whisk or fork. In the other mixing bowl place one whisked egg, peanut butter, milk, applesauce, brown sugar, vanilla paste, and oil. Now stir the wet ingredients together. Take a muffin tin and grease it. Next fold the dry ingredients a half cup at a time into the wet until all incorporated.

Now about getting the gooey center! Put just enough batter in the base of each muffin tin to fill it a quarter of an inch from the base. Now add 1 tsp of jam, and 1/2 tsp of peanut butter to the center of the batter. Cover with enough batter to fill them 3/4’s of the way up. Bake in the oven for 15 minutes. Remove muffins by running a butter knife around the edges of each tin, then pop out the muffins, cool on rack for 5 minutes and enjoy.

Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg whisked
  • 1/2 cup peanut butter
  • 1/2 cup milk
  • 1/2 cup applesauce
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla paste
  • 2 tbsp canola oil
  • 1 tsp Jam per muffin (filling)
  • 1/2 tsp peanut butter per muffin (filling)

Instructions

  • Preheat oven to 375 degrees.
  • In medium mixing bowl combine the flour, baking powder, baking soda, and salt.
  • In separate mixing bowl mix up beaten egg, peanut butter, milk, applesauce, brown sugar, vanilla paste, and canola oil. 
  • 1/2 cup at a time stir dry ingredients into the wet until they are all mixed together.
  • Grease muffin tin. Add enough batter to fill each muffin tin with 1/4″.
  • Place 1 tsp of jam and 1/2 tsp of peanut butter into the center of each muffin tin.
  • Cover the jam peanut butter filling with enough batter to fill each tin 3/4 of the way full.
  • Bake for 15 minutes.
