Honey Fig Yogurt Bars

Honey fig yogurt bars are simply the perfect fall harvest treat! Jennika and I planted our first tree in our yard this last spring. It was a difficult decision trying to decide what kind of tree we wanted. The only thing we knew for sure was we wanted a fruit tree. Finally, after many trips to the nursery and lots of research, we planted a black mission fig tree! Now, it isn’t producing fruit just yet, but that doesn’t mean we aren’t already trying out fig recipes!

HONEY FIG YOGURT BARS

The recipe for these honey fig yogurt bars happens in two parts. First, you make a graham cracker crust. Then, pour in the filling and toppings.

Honey Fig Yogurt Bars Ingredients:

Crust:

  • 1 1/2 cups crushed graham crackers
  • 6 tbsp melted butter
  • 1 tsp cinnamon
  • 1/4 cup sugar

Filling:

  • 1 cup honey greek yogurt (thick)
  • 1 tsp vanilla paste
  • 1/2 cup sugar
  • 1/4 cup fig jam
  • 1 large egg
  • 2 tbsp flour (If your yogurt is thin)
  • Honey for the top

Graham Cracker Crust

The first thing you need to do is find a toddler. In my case, we used our almost four year old. Okay, now place the graham crackers in a bag, seal it up, and let them smash the heck out of the crackers! Optionally, for a stress and mess free time, you can do this part yourself! Now, pour the graham cracker crumbs into a medium mixing bowl. Next, melt your butter (I just realized my microwave has an amazing magical “melt” function that somehow keeps the butter from exploding all over the place)!! Add the cinnamon and butter to the mixing bowl and combine well.

Preheat oven to 375 degrees. Take a 9×9 baking dish and line it with parchment paper. Next, dump the cracker crumb mixture into the dish and push it down into the corners of the dish. Place in oven for twenty minutes. Then, remove and set aside.

While the graham cracker crust is baking, you will want to start mixing up you filling and preparing the fruit. Take another mixing bowl, and add in yogurt, jam, vanilla paste, eggs, and sugar. If your Greek yogurt is thin, you will also add in two tablespoons of flour at this time. Now, stir up the mixture. Let’s tackle those beautiful figs! After washing them off, cut off the stems. For slicing, I typically cut each fig into thirds. This should give you fig slices that are around 1/4 of an inch thick.

Baking

Your oven should still be heated to 375, so move on to pouring in the filling. Spread the filling out evenly over the graham cracker crust. Carefully add the sliced figs over top and finish with a drizzle of honey. Finally, place the dish into the oven and bake at 375 for 50 minutes, or until the center is fairly set and lightly browned. Remove from oven and allow to cool before slicing. For best results, chill overnight and slice it once chilled. Enjoy this harvest fruit dessert with friends and family!

Ingredients

Crust:

Instructions

  • Smash the graham crackers into crumbs.
  • Pour the graham cracker crumbs into a medium mixing bowl.
  • Melt your butter
  • Add the cinnamon and butter to the mixing bowl and combine well.
  • Preheat oven to 375 degrees.
  • Line a 9×9 baking dish with parchment paper. (Or grease with butter)
  • Dump the cracker crumb mixture into the dish and push it down into the corners of the dish.
  • Place in oven for twenty minutes. Then, remove and set aside.

Filling:

  • Take another mixing bowl and add in yogurt, jam, vanilla paste, eggs, and sugar.
  • If your Greek yogurt is thin you will also add in two tablespoons of flour at this time.
  • Stir up the mixture.
