- 2 cups flour
- 1/4 cup cornstarch
- 1/4 cup powdered sugar
- 6 tsp matcha powder
- 1/8 tsp salt
- 1/2 cup brown sugar
- 1 cup softened butter
- 1 tsp almond extract
- 2 tsp honey
Almond Icing
- 1 cup powdered sugar
- 2 tbsp half & half
- 1/2 tsp almond extract
Preheat oven to 350 degrees.
Mix flour, corn starch, powdered sugar, salt, and matcha powder together in medium mixing bowl.
Sift dry ingredients twice. (If you want to try and sift your brown sugar in the mixture as well I encourage it)
Mix in brown sugar.
Add almond paste and honey to softened butter.
Combine butter into the dry ingredients.
Knead to form dough.
Roll into two inch log and chill for 1 hour in fridge, then roll out to 1/4 inch thickness and cut out shapes.
Bake for 12 minutes.
Cool for 5 minutes before moving.
Almond Icing
Mix together powdered sugar, almond extract, and half & half.
Place in sandwich bag and cut small hole in corner to ice from.
Once cookies are nice and cool drizzle icing over top.
