Matcha Shortbread Cookies

Almond and honey pair great with the beautiful matcha tea flavor in these cookies!

Ingredients

  • 2 cups flour
  • 1/4 cup cornstarch
  • 1/4 cup powdered sugar
  • 6 tsp matcha powder
  • 1/8 tsp salt
  • 1/2 cup brown sugar
  • 1 cup softened butter
  • 1 tsp almond extract
  • 2 tsp honey

Almond Icing

  • 1 cup powdered sugar
  • 2 tbsp half & half
  • 1/2 tsp almond extract

Instructions

  • Preheat oven to 350 degrees.
  • Mix flour, corn starch, powdered sugar, salt, and matcha powder together in medium mixing bowl.
  • Sift dry ingredients twice. (If you want to try and sift your brown sugar in the mixture as well I encourage it)
  • Mix in brown sugar.
  • Add almond paste and honey to softened butter.
  • Combine butter into the dry ingredients.
  • Knead to form dough.
  • Roll into two inch log and chill for 1 hour in fridge, then roll out to 1/4 inch thickness and cut out shapes.
  • Bake for 12 minutes.
  • Cool for 5 minutes before moving.

Almond Icing

  • Mix together powdered sugar, almond extract, and half & half. 
  • Place in sandwich bag and cut small hole in corner to ice from.
  • Once cookies are nice and cool drizzle icing over top.
