- 2 cups Flour
- 1/2 cup Rolled Oats
- 1/2 tsp Ground Nutmeg
- 3 tsp cinnamon
- 1 tsp ginger
- 1/4 tsp cloves
- 1/2 tsp salt
- 3 tsp baking powder
- 1 cup brown sugar
- 1/2 cup applesauce
- 2 tsp vanilla
- 6 tbsp softened coconut oil
- 2 cups Shredded Carrots Finely Shredded
- 1/2 cup Raisins
- 1/4 cup chopped walnuts optional
Preheat oven to 350 degrees.
Mix together in large mixing bowl: applesauce, vanilla, and coconut oil.
In medium mixing bowl combine flour, oats, spices, salt, baking powder, and sugar.
Mix dry ingredients into the wet 1 cup at a time until all combined. Stir in Carrots and raisins.
Grease or place parchment baking cups into tins. Fill each tin to the top with batter.
Bake for 24-28 minutes or until a toothpick comes out clean.
Allow to cool and enjoy
