Carrot Cake Oat Muffins Vegan

Vegan take on these delicious and moist carrot cake oat muffins!

Ingredients

  • 2 cups Flour
  • 1/2 cup Rolled Oats
  • 1/2 tsp Ground Nutmeg
  • 3 tsp cinnamon
  • 1 tsp ginger
  • 1/4 tsp cloves
  • 1/2 tsp salt
  • 3 tsp baking powder
  • 1 cup brown sugar
  • 1/2 cup applesauce
  • 2 tsp vanilla
  • 6 tbsp softened coconut oil
  • 2 cups Shredded Carrots Finely Shredded
  • 1/2 cup Raisins
  • 1/4 cup chopped walnuts optional

Instructions

  • Preheat oven to 350 degrees.
  • Mix together in large mixing bowl: applesauce, vanilla, and coconut oil.
  • In medium mixing bowl combine flour, oats, spices, salt, baking powder, and sugar.
  • Mix dry ingredients into the wet 1 cup at a time until all combined. Stir in Carrots and raisins.
  • Grease or place parchment baking cups into tins. Fill each tin to the top with batter.
  • Bake for 24-28 minutes or until a toothpick comes out clean.
  • Allow to cool and enjoy
