Cannellini Bean Vegetarian Meatballs

- 1 cup walnut halves
- 1 can cannellini beans rinsed
- 1/2 cup breadcrumbs extra for rolling meatballs in
- 1 egg
- 1/2 tsp onion powder
- 2 tbsp crushed garlic
- 1/2 tsp salt
- 1/2 cup Parmesan cheese
- 1 tsp oregano dried
In food processor, chop the walnuts.
Add cannellini beans, breadcrumbs, egg, onion powder, crushed garlic, salt, parmesan cheese, and dried oregano.
Pulse food processor until paste consistency is formed. (try not to over pulse)
Roll into tablespoon sized balls and roll meatballs in breadcrubs.
Use cast iron skillet with a half inch of canola oil to fry the meatballs on medium heat for about 3 minutes on each side. If browning to quickly turn down heat.For a healthier option bake the meatballs in the oven at 375 degrees on partchment paper for 18-20 minutes.
