Lemon Cardamom Dutch Babies

Last summer before going camping my wife and I bought a Dutch oven (which is awesome and we highly recommend) naturally the first dish we tried out were Dutch babies! They were a hit, our oldest loved them (baby brother was still to little to try them). Strangely we had never made them outside of camping. But the other day we had family in town for the holidays and decided it was time to Dutch baby it up!

Ingredients

  • 1/2 cup flour
  • 1/2 cup milk
  • 2 tbsp sugar
  • 3 eggs
  • 1 tbsp lemon juice
  • Dash or two of ground cardamom
  • 3 tbsp of butter

Instructions

  • Preheat oven to 425.
  • Take a 10 inch cast iron skillet or Dutch oven and place in hot oven, melt butter around the edges.  
  •  Pour into hot buttered skillet and cook for 20 minutes.
  • Blend other ingredients thoroughly in blender.
  • Top with berry compote and powdered sugar!
