Holiday Vegetarian Stuffing

Stuffing sometimes can be an afterthought, time to change that! This recipe will turn the side into an entree! Tasty sauteed apples, mushrooms, onions, and celery, a variety of fresh herbs and this stuffing is elevated to a holiday favorite!

Ingredients

  • 8 cups rustic bread stuffing
  • 1 stick butter
  • 1 Apple peeled and diced
  • 1 medium onion diced
  • 1 cup sliced crimini mushrooms
  • 1 1/2 cup peeled and sliced celery
  • 1/2 cup chopped fresh parsley
  • 2 tbsp chopped fresh sage
  • 1 tbsp chopped thyme
  • 1 tsp dried rosemary
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 cups broth 1 tbsp of Better than Bouillon No Chicken Broth in 2 cups hot water
  • 1 tbsp crushed garlic
  • 2 eggs

Instructions

  • Pre-heat oven to 350.
  • Use medium high heat on a cast iron skillet or large pot to melt one stick of butter. Add Apple, celery, onion, and mushrooms to butter. Cook down till the onion is translucent. 
  • Pour in your bread, garlic, salt, pepper, and herbs, stir, add half of the broth.
  •   Crack the two eggs into your remaining broth, whip together. 
  • Remove your dressing from the heat and pour into large bowl, mix in the remaining broth.
  • Pour into large casserole dish and place in the oven for 40 minutes.

I love to add in a package of Qourn Chik'n Tenders which are vegetarian and super tasty.
