Streusel Jam Bars

Ingredients

Bars:

  • 1 cup flour
  • 1 tsp cinnamon
  • 1/4 cup oats
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 5 tbsp butter
  • 1 tsp vanilla
  • 1/3 cup jam

Streusel:

  • 1/3 cup Oats
  • 1/2 tsp cinnamon
  • 3 tbsp Sugar
  • 2 tsp maple syrup
  • 3 tbsp cold butter
  • 3 tbsp flour

Instructions

Streusel

  • Mix oats, cinnamon, sugar, and flour in small mixing bowl.
  • Cut butter into small chunks and hand mix it into the dry ingredients until clumps form.
  • Add maple syrup and mix again.
  • Place in fridge until ready to spoon over bars.

Bars

  • For the bars mix your flour, cinnamon, oats, and brown sugar in medium mixing bowl.
  • Melt butter in microwave for 30 seconds or until completely melted, add maple syrup, and vanilla. Allow to cool for a few minutes before mixing in the egg.
  • Combine wet ingredients with the dry.
  • Place parchment paper in 9x9 dish. Spatula bar mixture evenly into the dish.
  • Evenly spread jam over the bar mixture.
  • Spoon streusel over jam.
  • Bake in oven for 25 minutes.
  • Allow to cool, cut and enjoy!
