Ingredients

  • 2 tbsp olive oil
  • 1 cup chopped onions
  • 1 tbsp crushed garlic
  • 1 1/2 cups red lentils sorted & rinsed
  • 3 cups vegetable broth
  • 1 can Coconut milk
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tbsp minced fresh ginger
  • 1/4 tsp cinnamon
  • 1 tsp coriander
  • 1/4 tsp cayenne pepper
  • 2 tsp Garam Masala
  • 1/2 tsp salt
  • 2 tbsp tomato paste
  • 1 large diced tomato
  • Cilantro chopped for topping
  • Plain Greek yogurt for topping

Instructions

  • Heat a large cast iron skillet to medium heat.
  • Add oil and sauté onions and garlic till onions are translucent.
  • Add in broth and coconut milk.
  • Stir in rinsed red lentils and add spices.
  • Cook on medium heat stirring often until liquid is soaked into the lentils.
  • Take Test bite to make sure the lentils are well cooked!
  • Serve the Dahl by itself or over basmati rice. Top the Dahl with plain Greek yogurt and chopped cilantro.
