- 2 tbsp olive oil
- 1 cup chopped onions
- 1 tbsp crushed garlic
- 1 1/2 cups red lentils sorted & rinsed
- 3 cups vegetable broth
- 1 can Coconut milk
- 1 tsp turmeric
- 1 tsp cumin
- 1 tbsp minced fresh ginger
- 1/4 tsp cinnamon
- 1 tsp coriander
- 1/4 tsp cayenne pepper
- 2 tsp Garam Masala
- 1/2 tsp salt
- 2 tbsp tomato paste
- 1 large diced tomato
- Cilantro chopped for topping
- Plain Greek yogurt for topping
Heat a large cast iron skillet to medium heat.
Add oil and sauté onions and garlic till onions are translucent.
Add in broth and coconut milk.
Stir in rinsed red lentils and add spices.
Cook on medium heat stirring often until liquid is soaked into the lentils.
Take Test bite to make sure the lentils are well cooked!
Serve the Dahl by itself or over basmati rice. Top the Dahl with plain Greek yogurt and chopped cilantro.
