I don’t know about all of you but today was a long day at work. After getting home and playing with the kids I didn’t feel like spending to long in the kitchen. But I also was HUNGRY!!! This red lentil dahl recipe is perfect for when you want something warm and comforting that taste like it has been cooking all day, but also want a easy one skillet meal in about 30 minutes!

Dahl is flavor packed! The spices and seasonings really come through in this dish. I highly recommend eating this red lentil dahl over basmati rice. It does stand on its own though as well. Have a piece of nann bread to dip in and you won’t regret it!

Red Lentil Dahl Instructions:

One of the best things about this meal, besides the DELICIOUS flavors, is that it is a one skillet meal! How easy is that? Not to mention clean up gets a lot easier when you are only using one pan!

First heat a large cast iron skillet to medium heat. Next add oil and sauté onions and garlic till onions are translucent. Now you will need to add in the broth and coconut milk. Stir in rinsed red lentils and add spices. Next cook on medium heat stirring often until liquid is soaked into the lentils.  Take Test bite to make sure the lentils are well cooked! Serve the Dahl by itself or over basmati rice. Top the Dahl with plain Greek yogurt and chopped cilantro. Naan bread is a great accompaniment to this recipe as well. Personally I haven’t found a better homemade naan bread than Ali’s recipe from Gimme Some Oven, definitely check it out! Enjoy!

Ingredients

  • 2 tbsp olive oil
  • 1 cup chopped onions
  • 1 tbsp crushed garlic
  • 1 1/2 cups red lentils sorted & rinsed
  • 3 cups vegetable broth
  • 1 can Coconut milk
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tbsp minced fresh ginger
  • 1/4 tsp cinnamon
  • 1 tsp coriander
  • 1/4 tsp cayenne pepper
  • 2 tsp Garam Masala
  • 1/2 tsp salt
  • 2 tbsp tomato paste
  • 1 large diced tomato
  • Cilantro chopped for topping
  • Plain Greek yogurt for topping
