Chickpea Turmeric Salad Sandwiches

Chickpea Turmeric Salad is an excellent vegan alternative to your typical chicken or tuna salad sandwich. Excellent as a spread or dip!

Ingredients

  • 1 can chickpeas rinsed & drained
  • 1/4 cup red onion diced
  • 1/4 cup chives diced
  • 1 tsp fresh parsley diced
  • 1/2 tsp dried dill
  • 1/4 tsp turmeric powder
  • 2 tsp mustard
  • 1 tsp apple cider vinegar
  • 1/4 tsp salt
  • black pepper to taste
  • 1/4 cup Mayonaise or vegan substitute (Just Mayo)
  • 1 tsp lemon juice

Instructions

  • Get out a medium sized bowl and a can of chickpeas. You will want to drain and rinse your chickpeas before using them. Now pour the chickpeas into the bowl.
  • Next add in your mayo of choice.
  • Now dice up your onion and fresh parsley and add it in along with the apple cider vinegar, lemon juice, and mustard.
  • Now it is time to add your dry seasoning; dill, salt, pepper, and turmeric.
  • Mash up ingredients by hand or using a few pulses in food processor.
