Chickpea Turmeric Salad Sandwiches
Chickpea Turmeric Salad is an excellent vegan alternative to your typical chicken or tuna salad sandwich. Excellent as a spread or dip!

- 1 can chickpeas rinsed & drained
- 1/4 cup red onion diced
- 1/4 cup chives diced
- 1 tsp fresh parsley diced
- 1/2 tsp dried dill
- 1/4 tsp turmeric powder
- 2 tsp mustard
- 1 tsp apple cider vinegar
- 1/4 tsp salt
- black pepper to taste
- 1/4 cup Mayonaise or vegan substitute (Just Mayo)
- 1 tsp lemon juice
Get out a medium sized bowl and a can of chickpeas. You will want to drain and rinse your chickpeas before using them. Now pour the chickpeas into the bowl.
Next add in your mayo of choice.
Now dice up your onion and fresh parsley and add it in along with the apple cider vinegar, lemon juice, and mustard.
Now it is time to add your dry seasoning; dill, salt, pepper, and turmeric.
Mash up ingredients by hand or using a few pulses in food processor.
