Chickpea Turmeric Salad Spread (vegan)

I can’t be sure why but whenever the sun comes out I crave fresh veggie sandwiches! It may only be March, but the sun is out here in the PNW so I am making chickpea turmeric salad sandwiches! There are a lot of chickpea salad recipes out there, and I have enjoyed many of them. This chickpea turmeric salad sandwich recipe is my favorite take on them though. It is simplistic but that’s what I think is awesome about it. Spread this salad out on a piece of whole wheat toast with fresh sprouts, lettuce, or maybe tomato slices and you can’t go wrong!

We have been dealing with some illness around my house. Found out my poor toddler has asthma, and both boys have been dealing with mean cold. So we have been making lots of super smoothies and antioxidant rich foods. Of course sick kiddos can be picky so getting some protein in them is important to! Chickpeas are an amazing source of healthy protein with each ounce containing 3 grams of protein. (More info on healthline). My boys love this chickpea turmeric salad on crackers as a dip, which works fine for me!

Instructions

Get out a medium sized bowl and a can of chickpeas. You will want to drain and rinse your chickpeas before using them. Now pour the chickpeas into the bowl. Next add in your mayo of choice. I highly recommend using Just Mayo, it is the best vegan mayo I have tried. Now dice up your onion and fresh parsley and add it in along with the apple cider vinegar, lemon juice, and mustard. Now it is time to add your dry seasoning; dill, salt, pepper, and turmeric. Time to mash it all up! This may seem a bit odd but I think the best tool for the job is a pastry blender, really any tool will work whether you use a fork, or throw everything in your food processor for a few moments. Just like that your done!

Time to toast up from bread and add your favorite sandwich toppings! For me it has to be sprouts, and tomatoes but get creative and make it your own. Or if you are like my littles get out some whole grain crackers and use the chickpea turmeric salad as a dip! Have fun and enjoy!

Ingredients

  • 1 can chickpeas rinsed & drained
  • 1/4 cup red onion diced
  • 1/4 cup chives diced
  • 1 tsp fresh parsley diced
  • 1/2 tsp dried dill
  • 1/4 tsp turmeric powder
  • 2 tsp mustard
  • 1 tsp apple cider vinegar
  • 1/4 tsp salt
  • black pepper to taste
  • 1/4 cup Mayonaise or vegan substitute (Just Mayo)
  • 1 tsp lemon juice
