Blueberry Breakfast Bread Pudding

Ingredients

  • 5 cups cubed challah bread
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup Greek yogurt
  • 1 tsp vanilla
  • 1/3 tsp cinnamon
  • 4 tbsp maple syrup
  • 1 cup blueberries fresh or frozen

Instructions

  • Pre-heat oven to 350 degrees.
  • Tear of slice challah bread into 1 inch cubes until you have 5 cups worth.
  • In medium mixing bowl combine and beat eggs, milk, greek yogurt, vanilla, cinnamon, and maple syrup.
  • Grease or place parchment paper in 9x9 dish.
  • By hand mix berries into the bread cubes and pour into dish.
  • Pour liquid evenly over the bread cubes.
  • Bake in oven for 30 minutes.
  • Serve with whipped cream and additional maple syrup if desired!
