Cardamom Shortbread Cookies

Ingredients

  • 2 cups flour
  • 1/4 cup corn starch
  • 1/4 cup powdered sugar
  • 1 tsp cardamom powder
  • 1/8 tsp salt
  • 1/2 cup brown sugar
  • 1 cup butter softened
  • 1 tsp Vanilla paste
  • 3/4 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Mix flour, corn starch, powdered sugar, salt, and cardamom together in medium mixing bowl.
  • Sift dry ingredients twice. (If you want to try and sift your brown sugar in the mixture as well I encourage it)
  • Mix in brown sugar.
  • Add vanilla paste to softened butter.
  • Combine butter into the dry ingredients.
  • Knead to form dough.
  • Two option here: roll into two inch log and chill for 1 hour in fridge, or chill then roll out to 1/4 inch thickness and cut out shapes.
  • Bake for 12 minutes.
  • Cool for 5 minutes before moving.
  • Use double boiler to melt 3/4 cup of semi sweet chocolate chips.
  • Place cookies next to each other on parchment paper.
  • Use spatula or spoon to drizzle chocolate over cookies.
  • Allow chocolate to cool and enjoy!
