Crispy Vegan Waffles

- 1 cup flour
- 1/3 cup corn starch
- 3 tsp baking powder
- 1 3/4 cup almond milk
- 2 tbsp ground flax seed
- 1/3 cup coconut oil melted
- 1 tsp vanilla paste
- 2 tsp sugar
Whisk together your dry ingredients in a large bowl. Add melted coconut oil, vanilla, and almond milk and mix to form batter.

In your kitchen aid mixer whisk the juice from one can of chickpeas adding 2 tsp of sugar as it mixes.
Once it had formed firm peaks (this will take about 5-7 min) it is ready to be folded into your waffle batter.
I suggest using a Belgium waffle maker to achieve best results. Recipe should make between 4-5 waffles.
