Lemon Puff Pancakes
Fluffy little lemony pancakes are as delicious as they are pretty to look at! Enjoy with blueberries, lemon curd, and yogurt.

- 1 1/2 cup flour sifted
- 1/4 tsp salt
- 1 tbsp baking powder heaping tbsp
- dash cardamom powder
- 2 tbsp butter melted
- 1/2 cup sweetened condensed milk
- 1 cup plain greek yogurt
- 1/4 cup lemon juice
- 1 tsp lemon zest zest of 1 lemon
- 1/2 tsp vanilla paste
- lemon curd for topping
- blueberries for topping
- powdered sugar for topping
Preheat oven to 400 degrees.
Sift your flour into a medium sized bowl, add in baking powder, salt, and pinch of cardamom.
In another bowl mix together sweetened condensed milk, yogurt, vanilla, egg, melted butter, lemon zest and juice together.
Now mix the wet and dry together.Grease your muffin tin and scoop in a large spoonful of batter into each tin.
Place in oven for 12 minutes.
Remove and serve with lemon curd, blueberries, yogurt, and a bit of powdered sugar over top!
