Vegan Banana Bread

- 1 3/4 cup flour
- 1 1/2 cup mashed ripe bananas
- 2 tbsp flax seed finely ground
- 1/2 cup maple syrup
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/3 cup coconut oil melted
- 1/4 cup almond milk
- 1/3 cup applesauce
- 1/2 cup chopped walnuts
Preheat oven to 325 degrees
In medium mixing bowl combine warm coconut oil with mashed ripe bananas, flax seed, and maple syrup.
Add in baking soda, salt, cinnamon, vanilla, applesauce, and milk.
In large bowl place flour and chopped walnuts.
Pour wet ingredients over dry and mix until just combined. (it's okay if there are still some flour pockets left.
Pour into greased bread pan and bake for 60 minutes or until toothpick comes out clean from the center.
Cool on rack for 5-7 minutes then slice!
