Vegan Banana Bread

Delicious banana bread you won't believe is vegan! No dairy, and only natural sweeteners are used in this recipe! Make a double batch or they won't last!

Ingredients

  • 1 3/4 cup flour
  • 1 1/2 cup mashed ripe bananas
  • 2 tbsp flax seed finely ground
  • 1/2 cup maple syrup
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/3 cup coconut oil melted
  • 1/4 cup almond milk
  • 1/3 cup applesauce
  • 1/2 cup chopped walnuts

Instructions

  • Preheat oven to 325 degrees
  • In medium mixing bowl combine warm coconut oil with mashed ripe bananas, flax seed, and maple syrup.
  • Add in baking soda, salt, cinnamon, vanilla, applesauce, and milk.
  • In large bowl place flour and chopped walnuts.
  • Pour wet ingredients over dry and mix until just combined. (it's okay if there are still some flour pockets left.
  • Pour into greased bread pan and bake for 60 minutes or until toothpick comes out clean from the center.
  • Cool on rack for 5-7 minutes then slice!
