- 2 cups flour
- 2 tbsp baking powder
- 1 heaping tbsp poppy seeds
- 3 tbsp sugar
- 1 egg
- 1/2 tsp vanilla
- 1/2 cup Greek vanilla yogurt
- 2 tbsp butter
- 1 1/2 cup milk
- Zest of 1 lemon
- Juice of 1 lemon 🍋
In large bowl mix flour, baking powder, sugar, and poppy seeds. Whisk till thoroughly mixed
In large measuring cup or medium bowl mix melted butter, yogurt, egg, vanilla, lemon zest, and lemon juice.
Combine wet and dry ingredients in the large bowl.
Heat cast iron skillet to medium high heat, oil skillet, pour 1/2 cup pancakes and cook until bubbles form then flip and cook until done.
