Preheat oven to 375 degrees.
In medium mixing bowl combine the flour, baking powder, baking soda, and salt.
In separate mixing bowl mix up beaten egg, peanut butter, milk, applesauce, brown sugar, vanilla paste, and canola oil.
1/2 cup at a time stir dry ingredients into the wet until they are all mixed together.
Grease muffin tin. Add enough batter to fill each muffin tin with 1/4".
Place 1 tsp of jam and 1/2 tsp of peanut butter into the center of each muffin tin.
Cover the jam peanut butter filling with enough batter to fill each tin 3/4 of the way full.
Bake for 15 minutes.
