Granola Recipe
Granola is SO versatile, eat it for a snack, pour milk over it, put it on top of a smoothie bowl, top your ice cream with it. Really add it to whatever you want. The same rule applies when making your granola, it is one of my sons favorite recipes to make because he gets to choose what we put into it. Do we go pecan, dried apricot and cherries? Or maybe toasted coconut, Mac nuts, and dried mango! The sky and my sons imagination are the limit! So feel free to have fun and play with different flavors, this is my usual base recipe.
Ingredients:
3 cups organic oats
1 cup pecans (or other nut)
1/3 cup pumpkinseeds (sub any seed or nut of choice)
1 tbsp flax seeds
3/4 cup coconut flakes
1 heaping tsp cinnamon
1/4 cup brown sugar (may sub maple syrup)
3/4 tsp salt
1/2 cup dried fruit
1/4 cup coconut oil or vegetable oil
1 1/2 tsp vanilla paste
If you want to make your granola chunky add 1 whipped egg white. To keep it vegan leave the egg out! 😉
Add dried fruit AFTER baking to keep the fruit chewy.
Bake for 1 hour at 250 degrees stirring every 15 min. Allow to cool before placing in jar.
