I have always been a huge fan of anything with homemade jam. So why not Streusel Jam Bars? When I was little I LOVED fruit! I have lots of videos of me as a little boy eating down apricots, raspberries, really and fruit I could get my hands on! Probably no surprise that I still love to incorporate fruit into most of my sweet dishes! These Streusel Jam Bars are no exception! I think you will enjoy making these, and enjoy eating and sharing them even more!
My son always jumps at the chance to help me bake. Mixing flour and dry ingredients is his specialty. (He is 3 for the less wet ingredients the easier it is to clean up!) #protip haha! I usually make some sort of baked breakfast good on Saturday mornings. Which is great because we can enjoy them all weekend long! (if they last that long!)
Bars are a great option because you can eat them with your breakfast, as a snack with your coffee or tea, or even have them for dessert! They really work in any situation! I think you will find there is no time you don’t want to have one! Any sort of jam will work with this recipe, we had a abundance of strawberries this year. Ingredients
Bars:
1cupflour
1tspcinnamon
1/4cupoats
1/2cupbrown sugar
1/4cupmaple syrup
5tbspbutter
1tspvanilla
1/3cupjam
Streusel:
1/3cupOats
1/2tspcinnamon
3tbspSugar
2tspmaple syrup
3tbspcold butter
3tbspflour
Instructions
Streusel
Mix oats, cinnamon, sugar, and flour in small mixing bowl.
Cut butter into small chunks and hand mix it into the dry ingredients until clumps form.
Add maple syrup and mix again.
Place in fridge until ready to spoon over bars.
Bars
For the bars mix your flour, cinnamon, oats, and brown sugar in medium mixing bowl.
Melt butter in microwave for 30 seconds or until completely melted, add maple syrup, and vanilla. Allow to cool for a few minutes before mixing in the egg.
Combine wet ingredients with the dry.
Place parchment paper in 9x9 dish. Spatula bar mixture evenly into the dish.
