Carrot Cake Oat Muffins
Carrot cake oat muffins! I am a bit of a sucker for muffins. I will admit that sometimes I am not the biggest fan of overly sweet foods. To me fruit or pie sounds much better than cake and icecream. I don’t like candy, I DO like dark chocolate, and black coffee. But all that said I do LOVE muffins. Maybe it is because muffins are cupcakes less sweet cousin. Whatever the case I love them, and this recipe is one of my favorites by far!
I make these carrot cake oat muffins almost every Easter Morning while Jennika is busy stuffing plastic eggs with treats and the boys are still sleeping their little heads! They make the house smell delicious! This year I decided it was time to switch them up and make a vegan version! What a simple change it was! Just swapped out the butter for coconut oil! Carrot Cake Oat Muffins, so I don’t want to lie and say these are somehow health muffins… But I DO think there is enough healthy things packed into them to give you a clean concious! Toppings!
One of the best things about this recipe is you can add in additional ingredients in the batter or to top them off. If you want to go all out, add a cream cheese frosting to the top. Five Heart Home has an amazing easy to make cream cheese frosting you should definitely check out! Another great addition would be chopped walnuts inside, or sprinkled over the frosting. I have also added in chopped pineapple inside along with the raisins. Delicious!

Carrot Cake Oat Muffins
Ingredients
- 2 cups Flour
- 1/2 cup Rolled Oats
- 1/2 tsp Ground Nutmeg
- 3 tsp cinnamon
- 1 tsp ginger
- 1/4 tsp cloves
- 1/2 tsp salt
- 3 tsp baking powder
- 1 cup brown sugar
- 1/2 cup applesauce
- 2 tsp vanilla
- 6 tbsp softened butter
- 2 cups Shredded Carrots Finely Shredded
- 1/2 cup Raisins
- 1/4 cup chopped walnuts optional
Instructions
- Preheat oven to 350 degrees.
- Mix together in large mixing bowl: applesauce, vanilla, and butter.
- In medium mixing bowl combine flour, oats, spices, salt, baking powder, and sugar.
- Mix dry ingredients into the wet 1 cup at a time until all combined. Stir in Carrots and raisins.
- Grease or place parchment baking cups into tins. Fill each tin to the top with batter.
- Bake for 24-28 minutes or until a toothpick comes out clean.
- Allow to cool and enjoy. Optionally top with cream cheese frosting once cooled!

I was searching for a way to use my CSA box beets and have been craving a fudge chocolate cupcake when I stumbled on your blog. I can’t wait to try this recipe! Such a good use for beets. I love the idea of a grain mill since I’ve been trying to make flour with my food processor. Making spelt, quinoa, flax flour at home would be awesome!

Looks so good! Hmmm, I love ramen but this looks too involved for me. I’m too much of a health snob to eat packaged ramen though, although tempting – would rather save my fat for favorite treats. Thanks for helping me get hungry though! ????
