Matcha Almond Shortbread Cookies
It’s Saint Patrick’s Day! Hope you remembered to where your something green! If not just make these Matcha Almond Shortbread Cookies, eat them and you should be safe! Matcha goes great in shortbread cookies, and is the perfect cookie to enjoy with a cup of tea on this super green day!
Matcha and green tea in general are full of health benefits! It is a great source of antioxidants to help fight off those nasty late winter bugs! So these matcha almond shortbread cookies are actually good for you?! Okay so they have plenty of sugar and butter too but lets focus on the antioxidants! Get a little healthy with your sweet! Can’t lose with that combination, life is about balance after all right?!
Matcha Almond Shortbread Cookies Instruction:
Mix your flour, cornstarch, powdered sugar, salt, and matcha powder together in medium mixing bowl. Now this is important: Always sift your dry ingredients when making shortbread cookies! This will makes sure your dough has that awesome shortbread consistency. I always sift my dry ingredients at least twice. Next take your softened butter and mix in the almond extract, and softened butter. Then you will mix the dry ingredients into the wet and knead it into a formed dough. Roll the dough into a roll about two inches in diameter, wrap it in plastic wrap and place into the refrigerator for at least 1 hour to chill.
Preheat oven to 350 degrees.
Okay has it been an hour yet?! Hurray! Okay let’s get out our rolling pins and get going! Roll the dough out till it is about 1/4 inch thick (if your dough starts to warm return it to the fridge for 10 minutes after rolling it out). Use your cookie cutter to cut out the cookies. Place them on parchment paper on cookie sheet. Place in oven for 12 minutes, remove and cool on rack till quite cool.
Almond Icing
Mix powdered sugar, almond extract, and half & half into medium bowl. Then pour icing into icing bag, or sandwich bag. Once cookies are all cool, drizzle icing over top.

Matcha Shortbread Cookies
Ingredients
- 2 cups flour
- 1/4 cup cornstarch
- 1/4 cup powdered sugar
- 6 tsp matcha powder
- 1/8 tsp salt
- 1/2 cup brown sugar
- 1 cup softened butter
- 1 tsp almond extract
- 2 tsp honey
Almond Icing
- 1 cup powdered sugar
- 2 tbsp half & half
- 1/2 tsp almond extract
Instructions
- Preheat oven to 350 degrees.
- Mix flour, corn starch, powdered sugar, salt, and matcha powder together in medium mixing bowl.
- Sift dry ingredients twice. (If you want to try and sift your brown sugar in the mixture as well I encourage it)
- Mix in brown sugar.
- Add almond paste and honey to softened butter.
- Combine butter into the dry ingredients.
- Knead to form dough.
- Roll into two inch log and chill for 1 hour in fridge, then roll out to 1/4 inch thickness and cut out shapes.
- Bake for 12 minutes.
- Cool for 5 minutes before moving.
Almond Icing
- Mix together powdered sugar, almond extract, and half & half.
- Place in sandwich bag and cut small hole in corner to ice from.
- Once cookies are nice and cool drizzle icing over top.
