Light fluffy crispy vegan waffles?! Might sound impossible but these waffles are seriously amazing! They even have a secret ingredient (chickpea juice) stay with me though!!! Whipped chickpea juice, yes the liquid in the can with the chickpeas, can be whipped and turned into an egg white like peaks! (Seriously awesome) and no they won’t taste like hummus! Now take this recipe and make them for your friends, they won’t believe the waffles are vegan I swear!

Secret to great waffles

  1. You need to mix all your dry ingredients separately from your wet! This is a must. If you mix wet in first you will lose your fluffiness.
  2. Just like with non-vegan waffles you need stiff peaks for your egg white replacement (chickpea juice). It takes longer to get stiff peaks with chickpeas.
  3. Make sure your waffle maker is nice and HOT!
  4. Only oil the waffle maker for the first waffle. The rest should be fine!

That’s all it takes to make amazing waffles! Now you just have to decide what to put on top of them!? I would suggest either fresh fruit and maple syrup, or a fruit compote! Ingredients

  • 1 cup flour
  • 1/3 cup corn starch
  • 3 tsp baking powder
  • 1 3/4 cup almond milk
  • 2 tbsp ground flax seed
  • 1/3 cup coconut oil melted
  • 1 tsp vanilla paste
  • 2 tsp sugar

Instructions

  • Whisk together your dry ingredients in a large bowl. Add melted coconut oil, vanilla, and almond milk and mix to form batter.

  • In your kitchen aid mixer whisk the juice from one can of chickpeas adding 2 tsp of sugar as it mixes.
  • Once it had formed firm peaks (this will take about 5-7 min) it is ready to be folded into your waffle batter.
  • I suggest using a Belgium waffle maker to achieve best results. Recipe should make between 4-5 waffles.
