Orange Ginger Soba Bowl

It is overcast and relatively to the hot summer days we have been having, cool. This left us wanting something warm and comforting, and this recipe did the trick! Keep the soba noodles and broth hot but serve the veggies all raw. Keep it vegan or add a poached egg on top.

Orange Ginger Soba Bowl:

2 servings

Two servings cook organic buckwheat soba noodles

1/4 diced head of red cabbage

1/2 cup peas

1 medium carrot sliced

1/4 cup sliced green onions

1/4 jalapeño pepper diced

1/4 cup sliced celery

Handful of chopped basil

Sliced tomato

Everything but the bagel seasoning

Poached egg

SAUCE: heat the broth

1 tbsp rice wine vinegar

Juice of 1 orange

2 tbsp soy sauce

1/2 tsp onion powder

1/2 tsp garlic powder

1 tbsp minced ginger

1 tbsp honey

1/4 cup vegetable broth

Instructions:

In bowl group separately hot soba noodles, cabbage, peas, celery, cucumber, carrots, jalapeños, sliced tomato, and green onions. Top with poached egg, basil, everything but the bagel seasoning, and pour over hot broth sauce.

Serve and enjoy.
