Savory Vegetarian Chicken Rice

I have to admit this recipe was first created as a cheat meal, what do I mean by “cheat meal” was I on some crazy diet I couldn’t stand? NO! I made this recipe so that when my kids decided to get picky with their diets I could pull out this recipe BAM! They would eat again! Thing is this delicious savory, buttery, rice dish is SO good I often make it almost every week. Not because the kiddos are being picky, but because I LOVE IT!

Ingredients:

2 1/4 cup water

2 cup white rice

1 tbsp Better than Bouillon No Chicken Base

One onion diced

A package Quorn Chik’n Tenders or your favorite chicken substitute.

1 tsp turmeric

3 tbsp butter

1 tbsp crushed garlic

1/2 tsp Salt

pepper to taste

1/4 tsp paprika

Chopped parsley on top

Savory Vegetarian Chicken Rice Instructions:

One thing I love more than anything after a long day of working or chasing my kiddos around the house is an easy to pull together, yet delicious dinner. This recipe takes the cake (mmm cake) when it comes to simplicity. Get out your instant pot and let it do the work for you!

First thing you do is set the instant pot to sauté. Melt down the butter and sauté the onions, garlic, and meat substitute until the onions become translucent. This usually is about 3 minutes. Next, and I love this, add in ALL the rest of your ingredients! Put the top on the instant pot and switch it over to pressure cook on high. Pressure cook your savory vegetarian chicken rice for eight minutes. Now release the pressure, top with fresh chopped parsley, and serve it while its hot! How simple is that? Your whole family will enjoy this wonderful recipe, kids and parents agree it is SO good!

If you are not using the Instant Pot you can easily still make this recipe. The changes I would suggest would to double the water to 2 cups for each cup of rice. If you choose not to use the Better than Bouillon Vegetarian Base, you should substitute the water for broth. Cook the ingredients on the stove and enjoy!

Ingredients

  • 2 1/4 cup broth I use 1 tbsp "Better than Bouillon No Chicken Base"
  • 2 cup white rice
  • 1 onion diced
  • 1 package Quorn Chik’n Tenders

  • 3 tbsp butter
  • 1 tbsp crushed garlic
  • 1/2 tsp Salt
  • pepper to taste
  • 1/4 tsp paprika

Instructions

  • Set your instant pot to saute and melt the butter.
  • Saute your onions, garlic, and meat substitute until the onions are transulent.
  • Add in seasonings, rice, and broth.
  • Set instant pot on pressure cook high setting for 8 minutes.
  • Release pressure and serve hot!
