Cauliflower Buffalo Tacos with Slaw

Happy Taco Tuesday! Buffalo spiced cauliflower tacos were on the menu for us! Cauliflower makes a great meat free alternative to your typical taco. Because everyone has their own favorite kind, use your favorite hot sauce to give the cauliflower a spicy kick! To play off that heat add some slaw (recipe here), some avocados. Add a little salsa, maybe some sour cream and you will have an amazing meal!

Trader Joes Grilled Cauliflower

Trader Joe’s frozen roasted cauliflower is a great product, and I love to use it  in my cauliflower buffalo tacos. I use frozen because it is a great way to save some time cooking this amazing meal. I love using frozen vegetables. This is especially during the winter when I don’t have any fresh vegetables growing in my garden! You might find it surprising to find that freezing vegetables is one of the best ways of preserving the vitamins and other nutrients within them. I always make sure that I save whatever I can from my garden, and fill up our chest freezer to the brim! But lets get back to these tacos!

Next you are ready to prepare your tacos! In your favorite taco shells, top the buffalo cauliflower with slaw, avocados, salsa, and crema if you like. Of course you can consider leaving the dairy out and keep it vegan!

Cauliflower Buffalo Tacos

Ingredients

  • 1 lbs frozen cauliflower
  • 1/4 cup oil
  • 1 tsp season salt
  • 1/4 cup flour
  • 1/2 tsp paprika
  • Dash black pepper
  • 2-4 tbsp hot sauce aardvark habanero hot sauce

Instructions

  • Toss the cauliflower in the oil and hot sauce.
  • In small bowl whisk the dry ingredients together.
  • Add dry ingredients over the cauliflower and mix together.
  • Broil in oven turning every two minutes. Once lightly browned remove.
  • Serve in your favorite taco shells, top with slaw, avocados, salsa, and crema if you like. Or leave the dairy out and keep it vegan!
