Chia Banana Oat Bars
These bars are such a hit at my house! My 2 (almost 3) year old can’t get enough of them! Oh, and they are healthy to boot! Full of protein and vitamins! Great for a quick running out the door breakfast, or for a post work out snack!
Ingredients:
1 cup oats
3 tbsp chia seeds
3 tbsp ground flax seed
1/4 cup pumpkin seeds
1/4 tsp salt
3/4 cup nuts (pecans/almonds/peanuts)
1/4 cup freeze dried blueberries (Trader Joe’s)
1/4 cup dried fruit
1 tsp cinnamon
1 tsp vanilla 1/4 cup peanut or almond butter
2 tbsp honey
Preheat oven to 350 degrees. Combine dry ingredients in medium mixing bowl. Soften peanut butter, mix with honey and vanilla, then mash banana into wet ingredients.
Pour wet ingredients into the dry. If you have kids now is the time to utilize them! Wash their hands and set them free hand mixing the ingredients!
Place parchment paper into 8×8 casserole dish, scoop ingredients into dish and push them down evenly into the form of the dish. Put on middle rack of the oven for 25 min.
Let cool, cut into bars, and then try not to eat them all in one sitting! 🙂
