“Best Ever” Crispy Waffles

This recipe was inspired by the best waffles I have ever had. While on vacation on the Big Island Hawaii we went to Paul’s Place in Hilo and had the most amazing waffles. Every time we go back to Hawaii we go out of our way to make it there! This recipe is my take on those waffles, minus the tropical surroundings they are pretty close!

On weekend mornings the boys almost always wake us up earlier than we would choose. So to survive we start the morning off with coffee. Get that lovely brown nectar dripping into the carafe as quickly as possible. Mission two? Breakfast. Just because we are up hours before what anyone would call brunch doesn’t mean we don’t want brunch food. On the weekend sometimes you need a cheat meal, for us that usually means light, fluffy, rich waffles!

Usually my two year old will declare “oh daddy, I will help you in the bakery” which is adorable and also means a huge flour mess! Totally worth it though.

If you want light crispy waffles it will require some butter but the real secret ingredient has to be cornstarch. Cornstarch helps give these crispy waffles their lightness, which is key for a great waffle.

So time to start making the waffles! Mix dry ingredients in medium bowl. Separate egg yolks and whites, whisk egg yolks with other wet ingredients together and stir into dry ingredients until just combined. Beat egg whites till they will hold peaks. If you want a forearm work out do it by hand, or maybe just use your favorite hand mixer and do it the easy way! Next fold egg whites into the mixture.  Don’t over mix. Cook in waffle maker and enjoy!

Ingredients

  • 1 cup flour
  • 1/3 cup corn starch
  • 3 tsp baking powder
  • 1 3/4 cup milk
  • 2 eggs
  • 1/3 cup butter melted
  • 1/2 tsp vanilla paste

Instructions

  • Combine and mix dry ingredients in medium bowl. 
  • Separate egg yolks and whites.
  • Whisk egg yolks with other wet ingredients together and stir into dry ingredients until just combined.
  • Beat egg whites till they will hold peaks and fold egg whites into the mixture. Don’t over mix.
  • Pour 1/3 cup of batter into waffle maker (depending on waffle maker) cook and enjoy!
