Roasted Acorn Squash (15 min!)
Acorn squash is one of my favorite autumn treats, it’s slightly sweet nutty flavor is delightful! It works great as a side, or incorporated into one of your favorite fall meals. My wife and I sometimes will cut a acorn squash in half, honey roast it and call it dinner! The following is my recipe for how to quickly roast an acorn squash.
Ingredients:
1 acorn squash
Olive oil for drizzle
Honey for drizzle
Salt
Black pepper
If you want to quickly roast your squash you are going to need a pressure cooker (I use an Instant Pot). Cut the ends of the squash off, turn the squash on end and slice length wise down the middle. Place half inch of water into the Instant Pot, place squash on wire rack above water. Set the pressure cooker for 5 min. While the pressure cooker does its thing, set the oven to broil. Once the pressure cooker is done, remove the squash halves and cut into 3/4 inch slices. Arrange the slices on parchment paper over a baking sheet. Drizzle with olive oil and honey. Next salt and pepper to taste. Place in oven for 5 minutes or until browning nicely. (As always when broiling watch the food closely)!
Once finished the acorn squash will be the perfect softness!
