One Skillet Migas
As a part of my nursing job I have to take call for emergency procedures. This is my weekend and I got called in at 730 this morning. This meant no breakfast, so when I got home I was ready for a big filling brunch. Migas is one of my favorite breakfasts and this take on Migas is just excellent. Try it out!
One Skillet Migas (vegetarian)
Ingredients:
2 tbsp olive oil
1 small onion sliced
1 cup sliced bell peppers
3 cups potatoes
1/2 tsp season salt
1/4 tsp paprika
1/4 tsp cracked pepper
8 eggs 1 tbsp sour cream
1 cup shredded cheese (jack or cheddar)
1/2 cup diced green onions
1 avocado
1/2 cup salsa
1/2 sour cream
Microwave or use your instant pot to cook potatoes until a fork goes in easy.
Sauté onions, peppers, potatoes, and sliced corn tortillas in large cast iron skillet. Add seasoning to skillet and stir in. Sauté ingredients until potatoes start to brown.
Whisk eight eggs and one heaping tbsp of sour cream together, add in shredded cheese. Pour into skillet over potato pepper mixture. Cook on medium heat until eggs bubble in center of the skillet. Place the skillet in the oven on low broil for about 3 minutes . (Watch it closely)
For topping combine 1/2 cup of sour cream with 1/2 cup of salsa. Dollop onto the top, add diced avocados, sliced green onions, fresh tomatoes and serve!
Additionally you can toast or fry up another 1/2 cup of tortilla strips for topping.
