Orange Spice Muffins
Oranges and spices combine beautifully in these zesty muffins! Moist from a healthy helping of Greek yogurt, if you are like me you won’t be able to eat just one!
Weekends are for muffins. At least that is what my son Tabor and I have decided! On weekend mornings we go downstairs get out the mixing bowl and start baking. Basically his favorite things to make is pancakes or muffins! Today we are making muffins, and orange spice muffins sound like the perfect way to go.
Muffins are great for weekends because if you make them at the beginning of the weekend you have a great snack to enjoy all weekend long. They go great with a bowl of fruit, or yogurt to make a healthy breakfast that you don’t have to feel guilty about. Also they are home baked goods so they will impress your guests or family! If you are wanting a slightly sweeter muffin I highly recommend an Italian in my kitchen’s Big Double Chocolate Chip Muffins!

Orange Spice Muffins
Ingredients
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 cup sugar
- 2 tsp nutmeg
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp allspice
- Zest of 1 orange
- 1/2 cup vanilla Greek yogurt
- 1 egg
- 1 cup milk
- 1/3 cup melted coconut milk
Instructions
- Mix your dry ingredients together in medium bowl.
- Melt the coconut oil in your microwave, combine and mix wet ingredients.
- Mix in wet ingredients into dry and stir.
- Grease muffin tin and spoon each cup 2/3rds full.
- Bake for 14 minutes at 350 degrees. Toothpick test to see if they are done, enjoy!
You.r recipe doesn’t include any orange flavor. Should it be added as zest?
