Cardamom Shortbread Cookies
Baking cookies for Christmas is almost as important as hanging up stockings and sharing presents. I love shortbread cookies especially. These Cardamom Shortbread Cookies are the perfect holiday treat!
When I think back to Christmas when I was little I can always remember LOTS of cookies. To be fair I remember there being lots of food in general, but after Christmas dinner out would come the cookies and hot drinks. I remember helping my mom bake and decorate the cookies. Cookies and Christmas, for me you really can’t separate the two. Still today when we get together there as a family for Christmas the cookies are there!
Cardamom spices these buttery shortbread cookies, and a drizzle of chocolate top them off. I love the crisp outer layer of shortbread, and the just a bit soft in the middle. They go excellent with warm drinks and good company!
Shortbread cookies are great because they are a simple cookie with plenty of options for decoration. We really love the chocolate drizzle, but feel free to experiment with what works best for you! Better yet decorate the cookies with your kids! It’s a great way to start a new tradition, or just to get the kids involved in the kitchen. Be creative with your decorations, and have fun! Cardamom Shortbread Cookies
Ingredients
- 2 cups flour
- 1/4 cup corn starch
- 1/4 cup powdered sugar
- 1 tsp cardamom powder
- 1/8 tsp salt
- 1/2 cup brown sugar
- 1 cup butter softened
- 1 tsp Vanilla paste
- 3/4 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Mix flour, corn starch, powdered sugar, salt, and cardamom together in medium mixing bowl.
- Sift dry ingredients twice. (If you want to try and sift your brown sugar in the mixture as well I encourage it)
- Mix in brown sugar.
- Add vanilla paste to softened butter.
- Combine butter into the dry ingredients.
- Knead to form dough.
- Two option here: roll into two inch log and chill for 1 hour in fridge, or chill then roll out to 1/4 inch thickness and cut out shapes.
- Bake for 12 minutes.
- Cool for 5 minutes before moving.
- Use double boiler to melt 3/4 cup of semi sweet chocolate chips.
- Place cookies next to each other on parchment paper.
- Use spatula or spoon to drizzle chocolate over cookies.
- Allow chocolate to cool and enjoy!
