I am almost exclusively a vegetarian, and many of the meals we eat as a family are vegan. It is a choice we have made and works well for us! Next I will admit that I love to fly fish, and so I will eat the occasional trout that I can’t release. I DO love the taste of fish, but what is a vegetarian suppose to do? Well this recipe is my answer to that question. These fish tacos are absolutely amazing and completely vegan. Of course you can dress them up however you would like, but why not keep them vegan and enjoy a healthy tasty meal!

The base of this recipe is chickpeas, and I just can not say enough amazing things about them. They are a healthy source of protein, have amazing texture, and take on flavors beautifully! Generally speaking chickpeas have a way of making it into a lot of my recipes! I even use them in my vegan waffles (no joke). If you go vegetarian or just enjoy a good healthy protein stock up on chickpeas! Another ingredient you will find in this recipe are Trader Joes Roasted Seaweed Snacks. I not only love the flavor they add to this recipe, they also are a super tasty snack!

Tacos are such great vessels food adventures! You can take them any which way you would like. I certainly would argue that any fish taco is best with an amazing spicy slaw fresh guacamole, lime juice, and an amazing fresh salsa. The point is that you should take these and run with them.
