Broccoli Macaroni & Cheese! Baked macaroni is a more grown up way to enjoy the noodle and cheese classic. Having a toddler in the house we have plenty of requests to eat “mac & cheese” but sometimes the adults of the house are not quite as enthused. Time to find a compromise! How about baked macaroni instead? Oh and lets sneak some broccoli in there for some veggie power while we are at it! We end up with broccoli cheesy goodness that the whole family can enjoy, and not feel completely guilty about!

Truth be told when I make this recipe I don’t always use macaroni noodles, I use penne, ronini or whatever is available! Maybe it isn’t actually mac & cheese at all?! Well it is delicious and a meal the whole family can enjoy! Try it this Broccoli Macaroni & Cheese out!

Broccoli Macoroni & Cheese

Broccoli Macaroni & Cheese! Technically Broccoli Rotini & Cheese, but who cares! It's delicious and with the added broccoli and least somewhat nutritious. The whole family can enjoy this cheesy classic!

Ingredients

  • 1 package tri-color rotini noodles 16oz
  • 2 tbsp crushed garlic
  • 1 cup broccoli cooked and minced in food processor
  • 4 cups shredded sharp cheddar cheese
  • 1/2 tsp salt
  • 3 tbsp olive oil
  • 1 cup milk
  • 3 eggs
  • 1/2 cup sour cream
  • Pepper to taste
  • Parmesan for topping
  • Italian bread crumbs for topping

Instructions

  • Preheat oven to 425 degrees.
  • In medium saucepan heat water to boil, cook noodles for about 8 min. on medium boil. (Use package instructions for cooking noodles if different)
  • Drain your noodles are pour into large mixing bowl.
  • In small saute pan brown the garlic.
  • Mix sour cream, salt, pepper, eggs, milk, and olive oil in mixing bowl.
  • Pour the wet mixture over your noodles and stir together.
  • Stir in cheese. 
  • Top with breadcrumbs and parmesan cheese.
  • Bake in oven for 25-30 or until top is lightly browned.

Notes

I like to use Rotini noodles rather than Macaroni because I find the ridges help hold the cheese on the noodle better!
