Our toddler and baby LOVE these veggie sloppy joes, and they are healthy to boot! I won’t deny that they usually both need a bath after this meal! That just means they loved it though! Lentils in the hair, lap, feet? Everywhere! (Parents you know what I’m talking about) Lentils might as well be a superfood and it makes me so happy to see my kiddos eating healthy home cook food! Try them out on your family! The recipe is vegan but feel free to add cheese and sour cream on top if that’s your jam! Eat with your favorite salad, we put a good helping of our Spicy Red Cabbage Slaw, or spicy arugula salad.

Lentils are just a great vehicle to transport flavors in. People often ask me how I replace meat in my diet. When you don’t eat meat you don’t replace it, you just eat food! Though finding protein rich natural solutions to this issue isn’t as hard as it might seem. Legumes are awesome, and lentils might be my favorite! Cook them down with your spices and broth and they will taste amazing!

Sloppy joes are great for an easy comforting meal, maybe not the freshest meal you ever had though. Add a salad or fresh raw veggies as a side to lighten this meal up. Comfort food is awesome though sometimes you just need to indulge. With this recipe you won’t have to feel the guilt!

Vegan Red Lentil Sloppy Joes! This comfort food has been taking to the next level! Lentils replace the meat and seasonings bring the flavor!

Ingredients

  • 1 cup red lentils
  • 2 cups vegetable broth
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 1 small onion
  • 1 can Tomato Sauce 16 oz jar
  • 2 tbsp tomato paste
  • 1 tbsp vegan worcestershire sauce
  • 1 tbsp garlic
  • 1/2 tsp chili powder
  • 1/4 tsp paprika
  • 1 tsp Salt
  • 1 tsp cumin
  • Black Pepper to taste

Instructions

Stove Top

  • Rinse lentils then add to saucepan of vegetable broth, cook down stirring occasionally. Cook for about 20 minutes.
  • Dice onions, tomatoes, and peppers, sauté in olive oil over medium heat.
  • Add in seasonings, Worcestershire sauce, garlic,  and tomato paste.
  • Add lentils to peppers and cook for 5 additional minutes until moisture is mostly gone.
  • Toast whole wheat bun. Add lentils and top with green onions, diced tomatoes, avocados. (Cheese and sour cream optional as well)

Instant Pot

  • Set to saute, add 1 tbsp olive oil, and cook down the onion, bell peppers, and garlic.
  • Add in seasonings, worcestershire suace, and tomato paste.
  • Pour in lentils, and broth.
  • Set Instant Pot to pressure cook high for ten minutes.
  • Toast whole wheat bun. Add lentils and top with green onions, diced tomatoes, avocados. (Cheese and sour cream optional as well)
