Blueberry Coconut Chia Pudding! We love this recipe and think you will too! Chia pudding is simply amazing! Healthy smooth and delicious! These little seeds are amazing at taking on flavors and the opportunities are endless! We love playing with different flavors in our chia pudding but blueberries are probably our favorite! The boys love to help make this (shaking the mason jar up) but are just as excited to eat it in the morning for breakfast!

We love blueberry coconut chia pudding for a light refreshing breakfast. Especially if we are running short on time or have to hurry off to swim lessons for the boys! As parents we are always thrilled to make something we as a family all love to eat, but that is also so nutritious.

Blueberry Coconut Chia Pudding

Chia pudding is healthy and delicious! Using freeze dried fruit to flavor the pudding this recipe will leave you wanting more!

Ingredients

  • 6 tbsp chia seeds
  • 1/4 cup freeze dried blueberries
  • 2 cups coconut milk
  • 1 tsp vanilla paste
  • 1 heaping tbsp maple syrup

Instructions

  • Put in quart mason jar and shake it up. 
  • Allow to rest in refrigerator for at least 5 hours. 
  • Use as pudding as a base for your fruit bowl.
  • We love to use our fresh made Granola recipe on top to add a satisfying crunch.

  • Thanks for sharing this recipe! My 8 year old & I just made a batch for tomorrow for breakfast! She’s already counting down the hours until it’s ready & she can have some. The only thing we did different was use fresh blueberries, mainly because we didn’t have any freeze dried ones & I wasn’t sure how using frozen would turn out. I’ll keep you posted on that! Excited to try this though & we also plan to make some of your granola as soon as ours gets a bit closer to running out lol

  • Sorry it’s taken so long to respond…our chia seed pudding turned out DELICIOUS!!! I used coconut milk & vanilla extract, as I don’t have the vanilla paste. I even had my husband try it and he loved it too! He’s super weird about trying new “healthy” items ๐Ÿ˜‚. I made him one using raw organic cacoa powder we have from Costco to make a chocolate pudding. FABULOUS!! Thank you again for sharing this amazingly good recipe!!
