Coconut Ginger Oat Balls (Vegan)
Great healthy snacks for the kids, or post bedtime treats for the parents! As a nurse working in the cath lab I am often on call and need to have healthy snacks to grab on the go! These Coconut Ginger Oat Balls do the trick!
Pre-heat oven to 350
Ingredients:
1 1/2 c. Organic oats
1/2 c. Chopped pecans
1/2 c. Chopped walnuts
1/2 c. Sunflower seeds
1/4 c. Chopped crystallized ginger
1/4 c. Chopped dark chocolate
1/3 c. Coconut flakes
1/4 c. Ground flax seeds
2 ripe bananas
1/4 c. Coconut oil
1/4 c. Maple syrup
1/3 c. peanut butter
1/4 tsp. salt
Combine ingredients in large bowl, form round balls and place on parchment paper on cooking sheet. Bake for 14 minutes, pull out, allow to cool, and then eat!
