Oatmeal Coconut Lactation Cookies
Breast milk issues can be a big deal. Some mothers and babies have it easy – the milk comes in, the babies latch, and the freezer fills up. Not everyone is blessed this way (or cursed… engorgement anyone?). So, what does a husband know about all this?! I’m no expert, but I do know how to listen. Men like action plans and solutions. These cookies are my plan for low milk. Oh and great tasting cookies? Low milk or not, no wife says no to that!
Pre-heat oven to 350
Ingredients:
1 cup whole wheat flour
1 cup all-purpose flour
2 cups organic oats
1 cup chopped pecans
1 cup coconut flakes
1 cup brown sugar
1 cup semi-sweet chocolate
3 tbsp ground flax seeds
4 tbsp nutritional yeast
1 tbsp poppy seeds
1 tsp salt
2 tsp cinnamon
1 tsp baking soda
4 tbsp yogurt
2 eggs
1 tsp vanilla paste
1 cup coconut oil
Combine dry ingredients in large bowl or kitchen aid, then mix in coconut oil, eggs, yogurt, and vanilla.
Make into golf ball sized spheres and place twelve evenly spaced on a parchment paper covered cookie sheet. Bake for 12-13 minutes remove and allow to cool on rack.
