Brunch is everyone’s favorite meal at our home. It’s not uncommon for breakfast for dinner to happen around here! But let’s be honest, vegetables aren’t always featured in brunch food. Finding new ways to sneak in vitamin pack veggies is always a win!

This recipe is really simple to pull off. First thing I would recommend is go buy a package of frozen diced cauliflower. Usually I am big on buying fresh veggies, but for this recipe the time savings is worth it! Pour two cups of diced cauliflower into a medium bowl. In a measuring cup whisk the two eggs up. Next add in the seasoning. Pour the egg mixture over your cauliflower, mix it up and then add in the flour.

Ingredients

  • 2 cups riced cauliflower
  • 1/2 cup flour coconut or almond to keep it low carb
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 eggs
  • dash paprika
  • dash cracked pepper

Instructions

  • Heat cast iron pan to medium low heat. 
  • Beat eggs and add in seasonings. 
  • Add riced cauliflower to medium bowl and pour eggs over top. Mix in flour to make hash brown batter.
  • Formed into patties and fry in oiled cast iron pan for about 3 minutes each side. Patties should be nicely browned on each side.
