I am a nurse in the cath lab, and when I was first hired into the position, I was replacing an amazing nurse. Not only was she incredible at her job, she also would bring in baked goods regularly! Big shoes to fill. So, what did I make first? These Double Chocolate Chip Cookies! That was 5 years ago, and they still keep me around – hopefully because I am a good nurse, but I’m sure the cookies didn’t hurt!
Cookie Baking Tips
- Don’t over whip your eggs.
- Use room temperature softened butter.
- Don’t place cookie dough on a hot cookie sheet. (They will start to melt.)
- Use parchment paper. Just do it. (You’ll thank me later!)
Instructions
These cookies are easy to pull together, which is great because you will want to be eating them as soon as possible. These cookies do have a secret ingredient. Once while working to perfect this recipe I found I only had half the baking cocoa I needed. I wasn’t sure what to do, so instead of running to the store I used some hot cocoa mix I had! The cocoa mix took these cookies go from good to amazing!
Mix together the dry ingredients (flour, cocoa powder, hot chocolate mix, salt, baking soda). Next, take your wet ingredients, and in a large bowl, mix them just until they are combined. Now, take the dry ingredients and mix them into the wet. This cookie dough is pretty sticky, so it’s going to be all over your hands. Just embrace it (or, wear gloves)! Pull off bits of dough, and roll into golf ball sized rounds. Take your parchment paper (you’re going to want parchment paper,) place it on your cookie sheet, and lay out the delicious cookie dough balls about 4 inches apart. Bake for 15 minutes, cool on rack, and then get out the milk and ENJOY!
