Blueberry Oatmeal Pancakes

My kids love to eat pancakes, so we try to find ways to add some health benefits when possible. These oat pancakes with fresh fruit and honey are pretty incredible. Who doesn’t like warm tasty blueberry pancakes right off the griddle? These hearty blueberry oatmeal pancakes will stick with you! The hearty tasty oats help these pancakes stick with you and keep you nice and full till lunch. Also great, your kids will love them too!

Organic Oats

I always use organic oats especially when cooking for my kids. Recent studies have found traces of pesticides make their way into oats! Yikes! The effects of these chemicals on our bodies is widely disputed, though a court recently ruled Monsanto was responsible for causing cancer in a man who frequently used round up for his job. We never use chemicals on our garden, so why buy products that have been inundated with them?! Organic Oats are easy to find these days, we prefer Bob’s Red Organic Quick Oats but great organic oats can be found almost anywhere, from Trader Joes to the bulk section at your local grocery.

Instructions:

Blueberry Oatmeal Pancakes are delicious and come together much as any other pancake recipe with a few important exceptions. Oats need to be cooked, even instant oats will be a bit tough if you don’t cook them a bit first. So for this blueberry oatmeal pancake recipe we will combine ALL the dry ingredients, except the quick oats, in a medium mixing bowl. Now take your milk, almond or cow work great (why not try it vegan), heat it for 1 minute in the microwave. Next add in vanilla, coconut oil, and maple syrup or honey. Now pour your quick oats in with the warmed wet ingredients and allow them to sit for 3 minutes. This allows the oats to soften. While the oats are softening go ahead and preheat your griddle or cast iron pan to medium high heat. Mix the wet and dry ingredients together.

Pour out pancakes on to the griddle, add fresh blueberries on top before flipping. Cook until bubbles come through the batter, then flip them over. You will want to get these blueberry oatmeal pancakes well cooked to keep them from being gummy. You should try to get some nice color on them, then serve with fresh fruit, yogurt, whipped cream, maple syrup or your own favorite toppings!

Ingredients

  • 1 cup flour
  • 1/2 cup organic quick Oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 pinch cardamom
  • 1/3 tsp salt
  • 1/4 cup coconut oil
  • 1 tbsp honey or maple syrup for (V) use maple syrup
  • 1 tsp vanilla
  • 1/2 cup blueberries
  • 1 1/4 cup warm milk Use almond milk for (v)

Instructions

  • Combine all dry ingredients except the quick oats in a medium mixing bowl.
  • Heat up milk in microwave for 1 min. Add quick oats and coconut oil to the milk and let sit for 3 minutes.
  • Mix wet ingredients into the dry.
  • Pour out pancakes on medium high griddle.
  • Add fresh blueberries on top of pancakes.
  • Use medium high heat on the griddle or cast iron skillet. You will want these oatmeal pancakes just a bit darker than regular pancakes.
