Lemon Puffs Pancakes
It’s finally the weekend and time to relax and enjoy time with your family! I don’t know about you but I have been wishing for the weekend since sometime around Wednesday! Plan today? First I would like to say no plan just sit back and relax. Let’s be honest though, two little boys? Fat chance! So if we have to do something let’s make it fun! How about lemon puff pancakes for breakfast, than a hike before lunch!
Lemon puff pancakes are not your run of the mill boring pancakes! These babies have puff and that makes them a lot more fun to a three year old! (Seriously parents, you all know the struggle! Make food fun and it will disappear!)
These lemon pancake puff are basically screaming to be served with lemon curd, yogurt, and fresh blueberries! Top them off with a bit of powdered sugar and you have an awesome looking breakfast!
Are these just a poor man’s ebelskiver? Maybe but they are still fun and delicious, and all you need is a muffin tin! Try the recipe out for yourself and see!
Lemon Puff Pancakes Instructions:
Preheat oven to 400 degrees.
Sift your flour into a medium sized bowl, add in baking powder, salt, and pinch of cardamom. In another bowl mix together sweetened condensed milk, yogurt, vanilla, egg, melted butter, lemon zest and juice together. Now mix the wet and dry together.
Grease your muffin tin and scoop in a large spoonful of batter into each tin. Place in oven for 12 minutes. Remove and serve with lemon curd, blueberries, yogurt, and a bit of powdered sugar over top!

- 1/4 tsp salt
- 1 tbsp baking powder heaping tbsp
- dash cardamom powder
- 2 tbsp butter melted
- 1/2 cup sweetened condensed milk
- 1 cup plain greek yogurt
- 1/4 cup lemon juice
- 1 tsp lemon zest zest of 1 lemon
- 1/2 tsp vanilla paste
- lemon curd for topping
- blueberries for topping
- powdered sugar for topping
