Vegan Banana Muffins

Warm fresh from the oven banana muffins are one of the best ways to start any day. Add a hot cup of coffee or tea and nirvana is reached! These vegan banana muffins are sure to get you there. Our family isn’t exclusively plant based, we enjoy some eggs and cheese occasionally, but when you have a recipe that is as good or better vegan why would you not use it! The eggs and milk will NOT be missed in these vegan banana muffins, guaranteed!

Bananas typically do not last long enough at our house to get over ripe. My two boys love to split a banana with every lunch, and my wife and I enjoy them in our smoothies. So when we do have over ripe bananas I get excited because that means banana bread! Best thing about banana bread is that really there isn’t to much prep work to be done. Mix up your ingredients, bake, enjoy! That is my kind of recipe.

Vegan Banana Muffins

INSTRUCTIONS

Preheat oven to 325 degrees before you get started cooking. This way it will be ready for your batter as soon as you have it mixed up! This recipe is easy to pull together so no need to wait!

You first want to mix together your wet ingredients and spices in a medium mixing bowl. First mash up your bananas I find it takes about 3 over ripe bananas to make 1 1/2 cups of mash. Combine warm coconut oil with mashed ripe bananas, flax seed, and maple syrup. Then add in baking soda, salt, cinnamon, vanilla, applesauce, and milk. Mix up with a fork. Now in a large bowl place the flour and chopped walnuts (feel free to substitute pecans, or remove the nuts if you have an allergy) Pour wet ingredients over dry and mix until just combined. (it’s okay if there are still some flour pockets left. Grease a muffin tin and spoon in batter filling each almost to the top. Bake for 60 minutes or until toothpick comes out clean from the center. Cool on rack for 5-7 minutes then enjoy!

USING GROUND FLAXSEED AS EGG REPLACEMENT

For each egg a baking recipe calls for use 1 tbsp of finely ground flaxseed. In addition add 3 tablespoons of dairy free milk or water. For this recipe we add 1/3 cup of applesauce in place of the liquid.

1 egg = 1 tbsp. ground flax seed + 3 tbsp liquid

Ingredients

  • 1 3/4 cup flour
  • 1 1/2 cup mashed ripe bananas
  • 2 tbsp flax seed finely ground
  • 1/2 cup maple syrup
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/3 cup coconut oil melted
  • 1/4 cup almond milk
  • 1/3 cup applesauce
  • 1/2 cup chopped walnuts or Pecans

Instructions

  • Preheat oven to 325 degrees

  • In large bowl place flour and chopped nuts.

  • Spoon into greased muffin tin and bake for 24 minutes or until toothpick comes out clean from the center.
  • Cool on rack for 5-7 minutes then enjoy!
