Easy Spanish Rice

This time of year my heirloom tomatoes are ripening as fast as I can pick them! What a great problem to have right? The only issue is finding new ways to get them into our meals. Spanish rice recipes often call for canned tomatoes or tomato paste. That might be fine for mid winter, but this time of year ditch the cans and use your fresh produce!

This spanish rice recipe uses Trader Joe’s frozen brown rice and only takes about 10 min! This recipe is fresh, slightly spicy, and will complement any Spanish entree.

Heat rice in microwave per box instructions. Next heat a cast iron skillet to medium heat, add tablespoon of olive oil, rice, bouillon, onion, ancho pepper, and tomatoes. Heat till onions are translucent, then add cilantro, green onions, and garlic. Stir frequently. Serve after 2 minutes additional cooking. Serve hot and enjoy!

Ingredients

  • 1 package of frozen brown rice
  • 3 diced tomatoes
  • 1/2 tbsp Better than Bouillon vegetarian chicken broth paste.
  • 1/2 cup diced green onion
  • 1/2 diced onion
  • 1 finely diced Ancho pepper
  • 1/4 cup chopped cilantro
  • 1 tbsp crushed garlic

Instructions

  • Heat rice in microwave per box instructions.

  • Heat till onions are translucent, then add cilantro, green onions, and garlic. Stir frequently.
