Quinoa Vegetarian Chili
Quinoa is an excellent source of protein and is an good replacement for meat in chili. It takes on flavors well and helps thicken the chili.
Who doesn’t want hot spicy chili on a cool autumn evening? The problem is if you are like me you were to busy to plan ahead and don’t have time to let your chili cook all afternoon! What to do? Time to invest in an Instant Pot! Seriously, we can’t stop using ours! This recipe was ready after only 10 minutes of pressure cooking. Try it out!
Ingredients:
10 oz package of frozen bell peppers
1 medium onion chopped
1 tbsp chopped garlic
1 fresh diced jalapeño
2 cups fresh tomatoes chopped
8 oz of cooked quinoa (I use frozen)
2 cans of pinto beans
1 can black beans
1 can vegetarian chili beans
1/2 tsp black pepper
1 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 1/2 tsp cumin
1 tsp seasoning salt
1 tsp salt
1 tbsp Better than Bouillon No Chicken Base
Dash of paprika
Combine in Instant Pot and pressure cook on medium for 10 minutes. Add toppings as you like. We enjoy avocado, plain Greek yogurt, tomatoes, and chopped cilantro. Your could also use sour cream, cheddar cheese, and maybe tortilla chips as well!
