Blueberry Bread Pudding
My wife is a huge fan of sweet dishes for brunch. Give her waffles, pancakes, crepes, dutch babies, or ebelskivers over hash browns, eggs, or toast any day. I might fall more into the savory side of things, but that’s why we are such a great couple right? We balance each other out! Well my kids have been sick and I have been at work a lot this past week (Cath lab nurse) taking call a few extra days and generally just not being home as much as I would like to be. So this weekend I have been trying to let her sleep in, and why not treat her right and make her something she would love for brunch.
The boys (1 and 3) are totally down to come downstairs and hang out with dad which is great because that lets mom get some much needed rest. Alder our youngest, was content to play with blocks, and Tabor are oldest was thrilled to help out with making this awesome blueberry bread pudding! (I put him to work tearing the challah bread apart)
So why bread pudding? Well to be honest, we had some left over challah bread sitting on the counter and inspiration struck! I put Tabor to work tearing up chunks of bread, and I got to work mixing up the eggs, milk, greek yogurt, vanilla, cinnamon, and maple syrup. We then got out the blueberries, and ate just as many as we put in the dish I think! I like this recipe because you really can’t mess it up! It is fun to tear bread apart whisk up your liquids, pour everything in a dish and presto you have an amazing breakfast!
Truth test came when my wife came downstair and we all sat down to breakfast. Result?! The recipe is a winner! Wife is happy, kids cleaned their plates and went to the play room while wifey and I sip our coffees. I think today will be a good day.

Blueberry Breakfast Bread Pudding
Ingredients
- 5 cups cubed challah bread
- 2 eggs
- 1/2 cup milk
- 1/2 cup Greek yogurt
- 1 tsp vanilla
- 1/3 tsp cinnamon
- 4 tbsp maple syrup
- 1 cup blueberries fresh or frozen
Instructions
- Pre-heat oven to 350 degrees.
- Tear of slice challah bread into 1 inch cubes until you have 5 cups worth.
- In medium mixing bowl combine and beat eggs, milk, greek yogurt, vanilla, cinnamon, and maple syrup.
- Grease or place parchment paper in 9×9 dish.
- By hand mix berries into the bread cubes and pour into dish.
- Pour liquid evenly over the bread cubes.
- Bake in oven for 30 minutes.
- Serve with whipped cream and additional maple syrup if desired!
