Blueberry Ginger Muffins
Blueberry Ginger Muffins! Finally it is that wonderful time of year when the berry bushes are starting to produce! Our boys fingers are stained red and blue every time we go to play in the backyard from all the berries! Raspberries, strawberries, and blueberries! Earlier this week I had a refreshing gingerberry kombucha by synergy. It was delicious! I had never thought of mixing ginger and berries and bam this muffin recipe was born!
Blueberry Ginger Muffin Instructions:
The great news is making muffins is easy! You don’t need a lot of time to pull together a great batch of delicious blueberry ginger muffins that will impress your family or guest. First preheat your oven to 400 degrees. Then I always pull out two mixing bowls, one large and one medium. Now take your dry ingredients including flour, quick oats, baking powder, baking soda, salt, sugar, and candied ginger in the large bowl. Mix until well combined. Then in the medium mixing bowl you will add the juice (about 1/2 c.) and zest from one large orange, melted butter, milk, egg, and vanilla paste. Finally mix the wet ingredients then pour them over the dry and combine, fold in the 1 1/2 cups of fresh blueberries. Grease muffin tin, or place muffin papers in the tin. Fill tins or papers evenly just below the top of the tin.
Streusel Topping
Before your place the muffin tin in the oven I highly recommend a delicious streusel on top! Why not add a little ginger kick to the topping as well! In a medium bowl combine 3 tbsp melted butter, 2 tbsp chopped candied ginger, 1/4 cup flour, 1/4 cup quick oats, 1 tsp cinnamon, and 1/4 cup sugar. Mix into streusel with fork. Spoon over the muffin batter in the tins.
Bake your blueberry ginger muffins at 400 degrees for about 15-17 minutes or until a toothpick comes out clean. Enjoy!

- 1½ cups all-purpose flour
- ½ cup quick oats
- 1/2 tsp. baking soda
- 1 tbsp baking powder
- ½ tsp salt
- ½ cup granulated sugar
- ¼ cup candied ginger chopped
- ½ cup orange juice fresh
- zest of 1 orange
- ½ cup milk
- 1 egg
- 2 tsp vanilla paste
- 1 1/2 cups fresh blueberries
- 1/3 cup melted butter
Streusel Topping
- 3 tbsp butter melted
- 2 tbsp candied ginger chopped
- ¼ cup flour
- ¼ cup quick oats
- 1 tsp cinnamon
- ¼ cup sugar
Instructions
Blueberry Ginger Muffins
- Preheat oven to 400 degrees.
- In large mixing bowl combine your dry ingredients: Flour, Oats, Baking Powder, Baking Soda, Salt, Sugar, and Candied Ginger. Mix well.
- In medium mixing bowl mix up your wet ingredients: Egg, Orange Juice, Melted Butter, Orange Zest, Milk, and Vanilla Paste.
- Stir wet ingredients into the dry and mix well.
- Fold in blueberries.
- Grease or place muffin papers in muffin tin.
- Scoop out batter evenly into tins, just below the top of the tin.
Streusel Topping
- Melt butter.
- Mix up flour, oats, sugar, and cinnamon.
- Pour butter over top and mix up with fork.
- Spoon streusel over the top of the muffin batter in the tins.
- Bake for 15-17 minutes until a toothpick comes out clean.
Hi! This recipe looks amazing; however, I don’t see a measurement instruction for the blueberries. Might you add a note? Would love to make them, but do not want to ruin the whole thing by mis-measuring. Thank you!
