Apple Cider Snickerdoodle Cookies

Apple cider snickerdoodle cookies are the perfect combination of cinnamon and apple spice. Get a batch of these cookies baking and catch all the fall vibes. Apple Cider Snickerdoodle Ingredients:

  • 2 cups flour
  • 1.5 tsp cream of tartar
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon (+1 tsp for rolling)
  • 1/2 tsp nutmeg
  • 1/4 tsp cardamom
  • 1/3 cup grab sugar (+1/4 c. for rolling)
  • 1/2 cup brown sugar
  • 1 1/4 cup apple cider
  • 1 egg + 1 egg yolk
  • 1/2 cup butter

Let’s Bake

Don’t you just love baking cookies?! Is there a more delicious smell than fresh baked cookies? I don’t know it might be a toss up with fresh baked homemade bread, but either way is a win! Sometimes I have held off on baking cookies because well I know I would eat to many. Don’t let that stop you! First, you probably no definitely deserve them, and secondly you can always take them to work, church, gym, playgroup, etc. Who doesn’t love the person who brings cookies! Take away here is make those cookies!

First thing you are going to need to do is preheat your oven to 400 degrees. Now get out a small saucepan and heat the apple cider to a low boil. Add in the granulated sugar and stir occasionally for about 12 minutes, be careful not to let it boil over! This should reduce the cider down to about 1/2 cup of concentrated apple cider. Set aside to cool. Now in a large mixing bowl combine flour, baking powder, cinnamon, nutmeg, cardamom, salt, cream of tartar, and brown sugar. In a kitchen aid mixer beat your eggs, butter, and brown sugar together, then pour in the apple cider reduction. At this point you add in the dry ingredients gradually until all mixed in. Allow dough to chill in fridge for 30 minutes.

In a medium bowl combine the granulated sugar and cinnamon. Form golf ball sized dough balls in your hands and roll in the cinnamon sugar mixture. Press flat and place on parchment paper covered cookie sheet. (If the dough sticks to your hands try wetting your hands with a bit of water). Baked in the oven for 14 minutes, allow to cool on rack before enjoying!
